Breakfast Sweet Potato

1 medium sweet potato

1/4 cup unsweetened applesauce

1/4 cup raw pecans (chopped)

Brown sugar for topping


  1. Cook sweet potato by wrapping in foil and placing in the oven. Or for an expedited cooking method, stab several times and then wrap in a damp paper towel. Microwave for 5-10 minutes based on size of potato until tender throughout.

  2. Slice down the center and mix applesauce into sweet potato.

  3. Top with pecans and brown sugar.

  4. Enjoy!
