Cinnamon Sugar Bars

1/4 olive oil

1 cup raw sugar

1/2 cup unsweetened applesauce

1 1/2 teaspoon vanilla extract

1/4 teaspoon salt

1 1/4 cup whole wheat flour

1 tablespoon cinnamon, for topping

1 tablespoon sugar, for topping


  1. Preheat oven to 350 degrees. Using a little olive oil, lightly grease an 8x8 pan to prevent sticking.

  2. In a mixer, cream together the oil and sugar.

  3. Add the applesauce, vanilla, and salt and blend well.

  4. Add flour in small portions to the mixture and blend until batter becomes a smooth consistency.

  5. Pour batter into greased pan and top with cinnamon sugar topping.

  6. Bake for 20-35 minutes, or until edges are lightly browned, leaving the bars soft on the inside. Let cool for 5 minutes.

  7. Enjoy!
