Harvest Grain Bowl

1 lb chicken breast

1 cup quinoa

4 cups broccoli

4 cup bell peppers, chopped

2 large sweet potatoes, cooked until soft

1/2 cup chopped pecans

1/2 cup crumbled feta

1/4 cup Annie’s Roasted Garlic Vinaigrette


  1. Heat pan on medium high heat.

  2. Heat water in a pot for quinoa.

  3. Cut chicken into bite sized pieces and place in pan.

  4. Add quinoa to pot with water once water is boiling.

  5. Cook chicken until done.

  6. Once the chicken is cooked, add all vegetables except sweet potato.

  7. Drain any excess water from quinoa, set aside.

  8. Add the sweet potato to the veggie and chicken mixture until all veggies are soft and sweet potatoes are done.

  9. Mix in quinoa.

  10. Plate each serving and drizzle with about 1-2 tablespoons of vinaigrette. Top with feta and pecans.

  11. Enjoy!
