Taco Tuesday

1 lb lean ground beef or ground turkey

1 bag frozen cauliflower rice

2 cups onions, chopped

3 cups bell pepper medley (variety of your choosing)

6 romaine lettuce leaves, chopped (whole for lettuce boat option)

1 beefsteak tomato, chopped for topping of salad or taco

1 tablespoon extra virgin olive oil

1 teaspoon chili powder

1 teaspoon garlic powder

1/2 teaspoon paprika

1/2 teaspoon cumin

1/2 teaspoon onion powder

1/4 teaspoon sea salt

1/4 teaspoon ground pepper

1/4 teaspoon cayenne pepper

1/4 teaspoon oregano

1/2 avocado, small slices for topping

2 cups shredded cheese of choice

Optional Serving Options: lettuce for salad, lettuce leaves for taco boats, or whole wheat tortillas.


  1. Pour olive oil in pan, heat pan over medium heat.

  2. Add protein of choice, stirring occasionally to cook thoroughly.

  3. Once meat is done, mix in cauliflower, onions, and peppers.

  4. After vegetables are 3/4 done, add all spices.

  5. Serve over lettuce for taco salad, in lettuce leaves for gluten free/keto friendly, or serve in whole wheat tortillas.

  6. Top with tomatoes, avocado slices, and shredded cheese of choice.

  7. Enjoy!
