Whole Wheat Snickerdoodle Cookies

For Cookies: 1 1/2 cups whole wheat flour

3/4 teaspoon cream of tartar

1/2 teaspoon baking soda

1/4 teaspoon salt

1/2 cup coconut sugar

1/4 granulated sugar

1/4 vegetable oil, softened

1/4 cup unsalted butter

1 large egg

1 teaspoon vanilla


For Topping:

2 teaspoons ground cinnamon

2 tablespoons granulated sugar



  1. Preheat oven to 375 degrees F.

  2. In a bowl, whisk together flour, cream of tartar, baking soda, and salt. Set aside.

  3. In a large bowl, use electric or hand mixer, cream together coconut sugar, granulated sugar, vegetable oil, and butter for two minutes.

  4. Add the egg and vanilla. Mix until evenly combined.

  5. With mixer on low, add the flour mixture to wet ingredients and combine until dough comes together.

  6. In a small bowl, combine sugar and cinnamon for topping.

  7. Scoop small balls out of dough and roll together to make them even. Then roll in cinnamon sugar mixture.

  8. Place evenly on baking sheet.

  9. Bake 8-10 minutes or until thoroughly cooked.

  10. Let cool 1 minute and move to cooling rack.

  11. Enjoy!
